Pressure Canning Three Homemade Soups for the Pantry

Leek Potato Soup Base • Chicken Taco Soup • Vegetable Soup

There is something so comforting about having jars of homemade soup lined up on the pantry shelf. On busy days - whether it's work, kids, errands, or simply one of those evenings where you don't want to cook - having wholesome, from-scratch meals ready to warm up is a gift to yourself and your family.

These soups came in handy last week, when my husband came down with a cold, and I was able to serve him soups that were ready to go with little fuss on my part.

Today I'm sharing a simple canning day where I safely pressure-canned three delicious homemade soups:
• Leek Potato Soup (as a dairy-free base)
• Chicken Taco Soup
• Classic Vegetable Soup

Chelsea inspired me from Little Mountain Ranch, whose videos always encourage me to build a pantry filled with nourishing food made with simple ingredients.

All three soups were canned using safe, approved pressure-canning practices, and each one makes an excellent grab-and-heat meal for your busy week.

Soups are wonderful things to pressure can, but they must follow proper safety guidelines. For this canning day, I made sure to use only broth-based, pourable mixtures with no dairy, flour, cream, pasta, or rice added before canning. Everything was processed in a pressure canner according to safe recommendations.

The reason is simple: dairy and thickeners can prevent proper heat penetration inside the jar, so they are always added after opening, never before canning.

This keeps your pantry meals both delicious and safe.

Soup #1: Leek Potato Soup (Canning Base)

Leek Potato Soup is one of those comforting, silky soups that feels like a warm hug in a bowl. For canning, we prepare this soup as a simple base - just potatoes, leeks, broth, and seasoning.
No butter, cream, or dairy of any kind.

Once canned, it becomes a versatile jar ready to be transformed into a creamy soup whenever you need it.

How to Finish the Leek Potato Soup After Opening the Jar

When it's time to serve your soup:

  1. Pour the contents of the jar into a saucepan.
  2. Warm it gently on the stove.
  3. Add a small amount of butter and cream (or half-and-half).
  4. Use an immersion blender to create a smooth, creamy texture.
  5. Taste and adjust seasonings - a pinch of salt, pepper, or herbs works beautifully. I did need to add more seasoning than I expected. I also topped it with chives.

This makes the final soup silky, rich, and absolutely delicious - while keeping the canning process safe and dairy-free.

Soup #2: Chicken Taco Soup

Chicken Taco Soup is a hearty, flavorful option that works perfectly for pressure canning. It includes broth, chicken, tomatoes, corn, mild taco spices, and beans (all approved for canning).

This soup is ideal for family dinners or easy lunches - just heat, add toppings like cilantro or cheese (after opening), and serve with tortilla chips or warm tortillas. My husband enjoyed his soup on a bowl of hot rice.

Soup #3: Classic Vegetable Soup

Vegetable Soup is such a pantry staple. It's packed with simple vegetables, broth, and herbs, and it cans beautifully because it's already naturally broth-based and dairy-free.

This one is perfect for quick, comforting meals. Pair it with a slice of sourdough, a grilled cheese, or a salad for a nourishing lunch or dinner.
