If you love the flavor of egg rolls but not the fuss of frying, this Egg Roll in a Bowl is for you! Inspired by the Whole30 recipe from 40 Aprons, I made a few adjustments to suit our family's tastes and what I had on hand - using ground beef instead of pork and adding a few handfuls of bean sprouts for added crunch. With a bag of coleslaw mix, it all comes together in one pan for a fast and nourishing meal that everyone will enjoy.
Suggested toppings include cilantro, crunchy chili oil, sesame seeds, and wonton strips.
