Easy Vegetarian Pancit Canton

Ingredients
  

  • 1 package pancit canton noodles
  • 1.5 cups dried shiitake mushrooms rinsed and soaked in hot water for 20 minutes
  • 1 onion sliced
  • 3 garlic cloves minced
  • 1 –2 carrots julienned
  • 2 ribs celery sliced diagonally
  • ¼ cabbage chopped
  • Handful of spinach
  • 3 cups vegetable or chicken broth
  • Soy sauce to taste
  • Salt and pepper to taste
  • Green onions chopped (for topping)

Instructions
 

  • Prep the mushrooms
  • Soak dried shiitake mushrooms in hot water for 20 minutes. Drain and slice if needed. Reserve some soaking liquid for extra flavor (optional).
  • Cook aromatics
  • In a large pan or wok, sauté the onion and garlic until fragrant and softened.
  • Add vegetables
  • Toss in carrots, celery, and mushrooms. Cook for a few minutes until slightly tender.
  • Bring to a gentle simmer, then add the pancit canton noodles directly into the pan. Let them absorb the broth and soften.
  • Season with soy sauce, salt, and pepper to taste. Toss everything together.
  • Add the cabbage and spinach and cook until just wilted.
  • Top with chopped green onions and calamansi and enjoy!
