Prep the mushrooms
Soak dried shiitake mushrooms in hot water for 20 minutes. Drain and slice if needed. Reserve some soaking liquid for extra flavor (optional).
Cook aromatics
In a large pan or wok, sauté the onion and garlic until fragrant and softened.
Add vegetables
Toss in carrots, celery, and mushrooms. Cook for a few minutes until slightly tender.
Bring to a gentle simmer, then add the pancit canton noodles directly into the pan. Let them absorb the broth and soften.
Season with soy sauce, salt, and pepper to taste. Toss everything together.
Add the cabbage and spinach and cook until just wilted.
Top with chopped green onions and calamansi and enjoy!
