HOMEMADE BAGUETTES (KitchenAid Method)
Simple homemade baguettes made with a stand mixer. These loaves have a soft interior with a lightly crisp crust—perfect for everyday meals, soups, or just warm with butter.
- 2 cups water
- 3 tablespoons olive oil
- 1 tablespoon sugar
- 2 teaspoons salt
- 5 cups all-purpose flour
- 1 tablespoon yeast
Instructions
Step 1: Mix the Dough
- In your stand mixer (like a KitchenAid), add:
- Water
- Olive oil
- Sugar
- Salt
- Flour
- Yeast
- Mix on Speed 1 for a few seconds to combine
- Increase the speed to 2 and mix for 5 minutes
Step 2: First Rise
- Remove the dough hook
- Cover the bowl with a towel
- Place in oven with the light on
- Let rise for 35 minutes
Step 3: Shape the Baguettes
- Lightly oil your counter or work surface
- Turn out the dough
- Divide into 3 equal portions
- Roll each into a baguette shape
Step 4: Score & Optional Toppings
- Place loaves on a baking sheet
- Score each loaf with a sharp knife or razor (4–5 slashes)
Optional:
- Brush with egg wash
- Sprinkle with:
- Garlic salt
- Everything bagel seasoning
Step 5: Second Rise
- Let the loaves rise for 35 minutes
Step 6: Bake
- Preheat oven to 425°F
- Bake for 25 minutes, until golden brown
Step 7: Cool
- Allow to cool slightly before serving
Notes:
- Oiling the counter makes shaping easier and keeps the dough from sticking
- The egg wash gives a beautiful golden finish, but it’s optional
- These are best fresh but can be reheated in the oven to crisp back up
