  • Handful of spinach
  • 3 cups vegetable or chicken broth

Instructions
 

  • Prep the mushrooms
  • Soak dried shiitake mushrooms in hot water for 20 minutes. Drain and slice if needed. Reserve some soaking liquid for extra flavor (optional).
  • Cook aromatics
  • In a large pan or wok, sauté the onion and garlic until fragrant and softened.
